Water pillows are basically just like water beds - pillows that have a liner inside and contain water instead of foam or something else. They give you a lot of control over the firmness, because you can just add more or less water as you see fit. They have kind of a soft and "natural" feel to sleep on, and they're great for people who want a firm mattress for their back but want something really soft for their head to rest on. It's also good for traveling because you can just toss out the water every night as you sleep and refill it when you go somewhere else.

 

Mediflow Fiber Water-based Pillow - Available online here for $32.95. This is a good brand, with a design so that the water can flow around inside it easily and adjust to the position of your head and neck as you sleep. The only downside is that this water pillow gets pretty heavy when it's actually full, so you may have to keep a few other pillows around if you like to read in bed with one propped behind you, etc.

Aquacore Water Pillow - Available online here for $81.97. A little better quality brand, this one is billed as being able to relieve neck pain by promoting the proper posture. I've got no clue whether it actually works for that or not, but it does have two different chambers inside it to allow you to select the level of support you want.
